CRISPY + CREAMY POTATO SALAD

COOK TIME 60 MINUTES
INGREDIENTS
CRISPY POTATOES
- 1.5 kg potatoes
- 3 tbsp olive oil
- 1 tbsp salt (or to taste)
- 1 tbsp garlic powder
- 1 tbsp chives
SAUCE
- 1/2 cup Greek yogurt
- 1/2 tub Nuffin chive + onion dip
- 2 tbsp FroPro garlic aioli
- Juice of 2 lemons
- 1 tbsp Dijon mustard
- 1/2 red onion
- 1 cup pickled anything (I used a mixed pickle jar)
- 1 handful dill
- 2 tbsp dried chives
- 1 cucumber
If you want it extra saucy, either reduce the potatoes to 1 kg or bump up the sauce ingredients!
INSTRUCTIONS
- Boil potatoes until soft, then transfer to a lined tray, lightly mash and season.
- Bake (or air fry) until golden and crispy.
- I did 40 mins in the air fryer, turning halfway, but adjust depending on your oven + how crispy you like them.
- Dice your veggies and mix all sauce ingredients in a large bowl.
- Once potatoes are crispy, toss through the sauce until everything is coated.
- Serve with your protein of choice. I went with steak and it was eliteee xx
