Creamy Pork Pasta (PRE GAME)
PREP TIME: 20 MINUTES
COOK TIME: 1-2 HOURS (LONGER THE BETTER)
INGREDIENTS
- 1 brown onion
- 1–2 tbsp olive oil
- 500g extra lean pork mince
- veg of choice (I used 2 zucchini, 1 cups mushrooms, 2 carrot)
- 400g tomato passata
- 2 x cans crushed tomatoes
- 2 tbsp beef stock powder
- 1 tbsp mixed herbs
- 2 tbsp tomato paste
- 1–2 cups water (depending on thickness)
- 375g tub light ricotta
- 300g -500g fresh pasta (or cook dry pasta separately)
- salt + pepper
- parmesan + parsley (to serve)
GARLIC BREAD
- fresh focaccia
- minced garlic
- mixed herbs
INSTRUCTIONS
- Dice and sauté onion in olive oil in a large pot
- Add pork mince and cook until browned
- Finely chop veggies (or use a thermo) and add in, cooking for 5–10 mins
- Stir in passata, crushed tomatoes, water, stock + herbs
- Bring to the boil, then simmer (lid on) for 20–30 mins
- Stir through ricotta, then add fresh pasta
- Reduce heat and simmer for another 10 mins or until pasta is cooked
Air fry focaccia with garlic + herbs at 180°C for ~10 mins until crispy 🤌
Serve with parmesan, parsley, salt + pepper and you’re GOOD TO GO
