YOPRO BREAKFAST MUFFIN BOWLS
If you know me, you know I’m obsessed with yogurt, so I had to toss together a meal-prep brekkie that keeps me fuelled during big training weeks.
The best part? Same base, different flavours = zero boredom.
Makes 3 large serves (or 4 smaller)
Blend together:
- 3 eggs
- 1 cup vanilla YoPRO
- 1 banana
- 2 cups quick oats
- 1 cup self-raising flour
- 1 tsp vanilla extract
- 1 tsp baking powder
- Pinch of salt
Blend until smooth.
- Preheat oven to 180°C.
- Spray 3 oven-safe containers and evenly divide the mix.
Now customise 👇🏼
🍫 Dark choc raspberry
- Raspberries + 1 square dark choc pressed into the centre before baking.
- Once cooked → sea salt + 170g vanilla YoPRO on top.
🥜 PB & Jam
- Strawberries + 1 tbsp natural peanut butter pressed into the centre.
- Serve with 170g strawberry YoPRO.
🍌 Biscoff banana
- Extra banana slices + 1 tbsp Biscoff pressed into the centre.
- Top with caramel YoPRO post-bake.
- Bake for 20-25 minutes until a skewer comes out clean
- Store in the fridge, reheat, fuel, repeat.
