Strawberry Jam and Pink Breakfast

INGREDIENTS:
- 3 cups frozen raspberries
- ½ cup maple syrup
- Juice of ½ lemon
- 2 tsp chia seeds
INSTRUCTIONS
- Add raspberries, maple syrup, and lemon juice to a small pot over medium heat.
- Allow the mixture to simmer until the raspberries begin to release their juices.
- Bring to a gentle boil, stirring occasionally, until everything is well combined.
- Remove from the heat, then mash with a potato masher or blend with a hand blender for a smoother texture.
- Stir through the chia seeds and let the jam sit for 5–10 minutes to thicken as the chia seeds absorb the liquid.
I’ve been loving this spread on toast with peanut butter before training, or on rest days stirred through protein yogurt for an extra boost!
