LEMON RICOTTA TOAST

INGREDIENTS
- 1 large piece of sourdough
- 3/4 cup light ricotta
- 1 lemon
Optional add-ons:
- Chilli honey
- Tomatoes
- Eggs
INSTRUCTIONS:
- In a small bowl combine your ricotta with the rind from 3/4 of your lemon (reserve some rind to sprinkle on top)
- Cut your lemon in half squeeze half of your lemon and combine.
- Toast your sourdough and spread your ricotta mix on top.
- Top with the remaining Lemon rind and an extra squeeze of lemon.
NOTES:
I also served mine with eggs (for extra protein), as well as some tomatoes and a drizzle of chilli honey.
