BREAKFAST BURRITO

INGREDIENTS

  • 1 wrap of choice
  • 1 medium potato, diced (~1 cm)
  • 2 eggs + ¼ cup milk
  • 2 thick slices halloumi, chopped
  • ¼ red onion, chopped
  • 1 tbsp chilli honey
  • 4 cherry tomatoes, chopped
  • 1–2 avocado
  • Parmesan, salt & pepper (optional)

Dipping sauce:

  • 2 tbsp natural yoghurt
  • 1–2 tbsp tomato sauce

(Optional: a little light mayo next time!)

INSTRUCTION

  1. Toss diced potato with olive oil, salt, pepper, and garlic powder. Air fry 10–15 min until crispy.
  2. Sauté halloumi and onion in a pan for a few mins, drizzle with chilli honey, let caramelise.
  3. Whisk eggs with milk, cook in the same pan to your liking.
  4. Assemble: Layer eggs, halloumi & onion, potatoes, tomatoes, and avocado in the wrap. Fold burrito.
  5. Optional crisp: Toast folded burrito in pan until golden.
  6. Serve: Mix yoghurt and tomato sauce for dipping.
