THREE CHEESE MUSHROOM TOASTIE

INGREDIENTS
- 2 slices of thick sourdough bread
- 2 cup chopped mushrooms
- 1 cup finely chopped spinach
- 1/2 cup cottage cheese
- 1/4 cup shredded light or higher-protein cheese
- 1/4 tsp minced garlic
- 1 tbsp grated Parmesan cheese
- 1/4 cup sauerkraut
- Salt and pepper to taste
- Butter for spreading on the outside
INSTRUCTIONS
1. Finely chop the mushrooms and spinach.
2. In a medium-sized pan, sauté the mushrooms and spinach until they are soft.
3. Stir in the minced garlic, cottage cheese, and shredded cheese, cooking until the cheese is melted.
4. Spread the mixture onto one slice of bread, then add the Parmesan and sauerkraut.
5. Top with the second slice of bread to form a sandwich. Butter the outer sides.
6. Return the sandwich to the pan and cook until both sides are golden and crispy. Enjoy!
