QUICK TOFU SANGA

INGREDIENTS
- 1 bread roll of choice
- 1/2 packet Thai marinated tofu (from Woolworths)
- 2-3 tbsp cottage cheese
- 1/4 avocado
- 1/2 tomato or 1/2 cup chopped cherry tomatoes
- 1/2 cucumber
- 1/2 cup spinach
- 3-4 baby cos lettuce leaves
- 1/2 cup roasted pumpkin (I had this leftover)
- 1 tbsp light mayo
INSTRUCTIONS:

Pan-fry the tofu for 3 minutes on each side, or until heated through.

Toast your bread roll and layer it with the ingredients of your choice (feel free to mix up your toppings). Enjoy!
NOTES:
You can top it with whatever salad you like :)
