Greek Tofu Bowl

PREP TIME: 5 MINUTES 

COOK TIME: 15 MINUTES 

INGREDIENTS

  • 1/4 block of cooked tofu (i cook mine in the air fryer for 15 minutes) 
  • 1 cup cooked rice 

Greek salad

  • 1 cup mixed lettuce 
  • 1/2 tomato 
  • 1/4 cucumber
  • 1/4 capsicum 
  • 1 slice of feta (crumbled)
  • 5-6 sliced olives 
  • Lemon juice 
  • Salt and Pepper 
  • 1 tbsp Balsamic vinegar 

INSTRUCTIONS

  1. Cook your tofu and rice however you like 
  2. Place your rice, tofu and greek salad ingredients in a bowl and season with salt and pepper and drizzle with your vinegar 

You can easily make a big batch of salad and rice and take it for leftovers :)
