Greek Tofu Bowl
PREP TIME: 5 MINUTES
COOK TIME: 15 MINUTES
INGREDIENTS
- 1/4 block of cooked tofu (i cook mine in the air fryer for 15 minutes)
- 1 cup cooked rice
Greek salad
- 1 cup mixed lettuce
- 1/2 tomato
- 1/4 cucumber
- 1/4 capsicum
- 1 slice of feta (crumbled)
- 5-6 sliced olives
- Lemon juice
- Salt and Pepper
- 1 tbsp Balsamic vinegar
INSTRUCTIONS
- Cook your tofu and rice however you like
- Place your rice, tofu and greek salad ingredients in a bowl and season with salt and pepper and drizzle with your vinegar
You can easily make a big batch of salad and rice and take it for leftovers :)
