1 x 500 gram packet lemon chicken
3 x wholemeal pita pocket
6 baby potatoes
1/4 butternut pumpkin
1 tbsp olive oil
1 tbsp greek seasoning*
Quick Greek Salad:
1 lebenese cucumber
1 large tomato
1/4 red onion
1 cup chopped lettuce
1/2 lemon
2 tbsp chopped mint
SnP
Bowl add ons:
1 tbsp garlic Hummus
1 tbsp tzatziki
INSTRUCTIONS:
INGREDIENTS

Dice your potato and pumpkin into small squares (1 cm size) and coat in olive oil and your greek seasoning and add to your airfryer for 20 minutes

Cook your lemon chicken (I either add mine to the airfryer with the veggies cooking for 6 minutes either side or you can pan fry)

Dice your greek salad ingredients and combine In a medium size bowl with lemon juice and salt and pepper

Toast your pita pocket in the toaster, sandwich press or pan until hot and crispy on the outsides

Once your veggies and chicken are cooked, evenly dish all the ingredients into a bowl or containers for meal prep
