1 tsp olive oil

1 brown onion, finely diced

1 x 450g firm tofu

2 tbsp tomato paste

2 tbsp garlic paste

1 cup nutritional yeast

1 tbsp curry powder

1 tsp turmeric powder

1 cup water (adjust as needed)

Salt and pepper to taste

For Serving:

Rice

Roasted pumpkin and Brussels sprouts

Wilted spinach (fresh from the garden)

Sauerkraut

Lime juice

Sesame seeds

INSTRUCTIONS:

INGREDIENTS 

  1. Prepare the Onion: Finely dice the brown onion.

  2. Sauté the Onion: Heat a large pan over medium heat and add the olive oil. Fry the onion until it turns golden brown.

  3. Crumble the Tofu: Using your hands, crumble the tofu directly into the pan. Use a spatula to break it down further.

  4. Add Tomato and Garlic: Stir in the tomato paste and garlic paste, mixing well.

  5. Season the Mixture: Add the nutritional yeast, turmeric powder, and curry powder, stirring to combine.

  6. Adjust Consistency: Pour in the water, starting with ½ cup. Stir and add more if needed to prevent sticking; you want a moist but not overly watery mixture.

  7. Season to Taste: Add salt and pepper as desired.

  8. Serve: Enjoy your cheesy turmeric tofu with your choice of sides, such as rice, roasted vegetables, wilted spinach, sauerkraut, lime juice, and sesame seeds.
