1 tbsp extra virgin olive oil 

1 brown onion 

1 x 500gram packet extra lean beef mince 

2 x 400gram cans mixed beans 

1 x 400gram can tin tomatoes 

1 1/2 cups vegetable stock 

1 tbsp tomato paste 

2 x 35 gram sachets of mingles chilli con carne spice mix 

1 x 500 gram packet mushrooms 

Salsa:

1 x 200 gram cherry tomatoes 

1 large cucumber 

1 medium capsicum 

1/2 lemon 

Salt and pepper 

To serve:

Natural yogurt 

Avocado 

Coriander 

Corn chips (optional) 

INSTRUCTIONS:

INGREDIENTS 

  1. Prepare the Vegetables: Finely dice the onion and mushrooms.

  2. Sauté the Onions: Heat a large pan over medium heat with olive oil. Add the onions and sauté until golden brown.

  3. Cook the Mushrooms: Add the diced mushrooms and ½ cup of stock. Cover the pan and cook until the mushrooms are softened and have shrunk in size.

  4. Brown the Beef: Stir in the beef mince and tomato paste, cooking until the meat is browned.

  5. Season: Add the Mingle seasoning and mix until everything is well coated.

  6. Combine Ingredients: Add the canned tomatoes, beans, and any remaining stock. Cover the pan again.

  7. Simmer: Bring the mixture to a boil, then reduce the heat and let it simmer until thickened.

  8. Serve: Enjoy with salsa, yogurt, avocado, and corn chips.
