1/4 cup olive oil
1/4 cup liquid sweetener e.g. sugar free maple syrup
1/2 cup unsweetened almond milk
2 eggs
1 tsp vanilla
2 mashed bananas
2 cups wholemeal self raising flour
1/2 cup brown sugar
1 tsp cinnamon
1 tsp bicarb soda
Pinch of salt
1 cup frozen mixed berries
1/2 cup dark choc chips

You can store in an airtight container in the fridge for 4-5 days
*Chocolate is optional - you can do nuts instead

Pre heat oven to 180 degrees

In a large bowl whisk the olive oil and maple syrup together before whisking in the eggs

Whisk in the milk and vanilla

Add in your mashed bananas and combine

Add in all of your dry ingredients to the same bowl and combine

Fold through your berries and chocolate

Spray or line 12 muffin tins and fill with mixture

Dust with extra cinnamon

Bake for 20-25 minutes until cooked through
